Replace the ice thickness control hanging on front of the evaporator plate

where is the water running on the ice head or is this a remote water cooled condenser? If water is running all the time at the ice head into the sump tray and overflowing into the ice bin then check the water inlet valve ether rebuild or replace valve but make sure the water low sensor is not calling for water when the sump tray is full of water.

You need to pull the bin full sensors and clean or replace them. Pull the front cover off remove the ice deflector you will see the water sump tray pull the ice deflector grate out of sump. Now where the ice fall into the bin on the right and left side in the shout there is 2 sensors they will pull out sideways, they will both have a wire ran to them pull wire and sensor up to where you can see the red sensors om them take a descale solution Scotsman brand mix per instructions and clean the eyes now would be a good time to clean and disinfect the whole machine. Install them back and start machine if this dose not clear the bin full light then replace them.

check for power to valve coil. If it remains it's a control problem. If no power and still in harvest, valve is stuck. Unit usually does not exceed a 6 to 8 minute harvest.

The thermostat energizes the contactor. If it is bad, thus you problem.

either there is a call for cooling from the bin thermostat or the condenser needs to be cleaned. Check the gaskets to make sure they are not cracked or torn.

Is it making the proper size cubes?

Check for trash in the water valve. Insure the water lines don't have rust flakes in them. The water valve is operated by the float arm. Anything in the water line can keep the valve stuck open and stop production of ice. Hope this helps, Sea Breeze

There are a couple of reasons I can think of. One is that the water is running away for some reason and being replaced with ambient mains water.. The other possibility is that the unit is marginally low on refrigerant gas. Another though is that the condenser fins are blocked, this causes general overheating of the compressor and the gas temperature in general. It is a commercial machine and should be professionally serviced at least every 12 months. At my last position, all of ours were serviced every 6 months under contract to keep them in tip top condition. The environment was airport business class lounges and you can't afford to have no ice. 3. If the water is getting cold and if the spray nozzles are working properly then there should be ice in the molds (you can feel with your fingers). Then the pump should shut off and the cooling system goes into harvest cycle. At this point a reversing valve (under the unit) causes the ice making mild to warm. Combined with the fresh water (refilling the reservoir) running over the mold and the warming mold, the cubes should release.
4. Typical fill, freeze and harvest takes approx. 25-28 minutes.

If the "no water" light on your Scotsman ice maker is flashing, it means that the ice maker is not receiving a sufficient supply of water. There could be a few possible causes for this issue. Here are a few things you could try:
