There is plenty of online information - below is a link to the results of a google search. We have a couple of anodised saucepans and food does stick sometimes, though an overnight soak in water and detergent has never failed to remove the burnt on food without needing to scrape. Anodising aluminium does produce a slightly porous surface so an alternative finish will adhere better - ceramic, teflon, colour or just a layer of oil to condition the pot. Yes, leave it to cool to room temperature and then store it in the fridge until tomorrow when you continue cooking I suggest you add a few minutes to the time to allow for it to come back to cooking temperature.
