When powered up, why do the machine relays and water solenoids click on then go off, repeating this action a few seconds later?

this is normal. The tank water waves when wash motor is running and the float probe goes on and off

Rinse temp not high enough on hobart c44a dishwasher

If your water temp. gauge (on piping) is showing 180 but the digital display is only reading 125 deg. then I would remove the water temp sensor from the rinse piping on back upper part of machine (It is a small probe with wires coming out of it). Clean probe with emery cloth and put it back in to see if that changes the display. If it doesn't then you may need to replace the probe.

Gas burner won't lite to heat wash water

Asuming the gas isn't turned off. The usual cause is a dirty or blocked air inlet to the combustion box. Fun to get at as it's behind the conveyor drive motor. When you remove the intake baffle from between the fan and it's rectangular inlet, make a note of how many holes are covered and open. You might have 8 open and 4 half open for instance. Thoroughly clean the inlet, and fan blades and housing. It's probably choked enough to run a rich mixture, which is reluctant to light. You may even have a backfire when the unburnt gas ignites in the exhaust plenum. Any further in and you should be a certified gas technician. There is an interlock switch on the burner box. If you need to go inside the box, shut off the gas. It will allow you to monitor the ignitor and hear and see the ignition arc. Process of elimination from there. Prove for good air, correct manifold pressure, ignition and flame monitor. Remote chance its the flame rod oxidised. Have new gaskets handy if you are removing the ignitor rods, and place back exactly where they were for correct gaps of igniter and flame rods.

Strong gas fumes when burner is on to bring up wash temp just had burner replaced

there are only two reasons that this would happen. 1. The burners are not adjusted correctly for optimal performance and they are running rich. Could be a gas pressure issue causing this or the orifice and fuel air adjustment needs checked. 2. The ventilation is not adequate. You need to measure the CO level if this is not vented to the outside. If it is then you need to make sure the flu is adequate and there are in temp inversion issues or room air causing backflow etc.

How to fix a commercial dishwasher

Simply determine what is not working, diagnose the problem, make correction or replace defective part and test operation. This is the best answer possible as there is no information as to what is wrong with the machine in your post.
