There may be an excessive carbon deposits or soot formation inside the heat tubes of your fryer that's why the flames can not get inside. You have to remove these soot or carbon deposits to correct the problem. This problem is caused by low gas pressure.
Also check if there is no obstruction on top of flue riser where products of combustion exits. Your exhaust must also be working when using the fryer.

After you have assembled the filtering machineprior to filtering, the powder must be spread evenly on top of the filter paper.Once you drain the oil, let it circulate on filter pan for about 5 minutes so that the powder will mix with oil before pumping it back to the fry tank. High limit kicks out fryer and pilot light can

Since you've mention the pilot light goes out at 400 degree F, then we are talking a gas Deep Fryer. The deepfryer usually use at 350 degree F for chips or else. Because the oil will start breaking down its quantity of frying very quickly over that temperature. Most people set at 350 degree F. Now we comes back to your problem, First you should have a deep fryer thermometer they espcially made for deep fryer, (You only mention 400 or better ) that make me think you're only guessing. Knowing the temperature is very important, most Hi limit is set at 420 degree F.
To me it seen the Hi Ltd control is working and that is why it cutting out the pilot when it reach its limit but we don't know what temperature that when the hi limit cutting out at.
When you have a thermometer, put it in the cold oil and turn the temperature to 100 degree F to see what the temperature control cutting out at. slowly increase your setting until it cutting out at 350 degree F . If you set at 250 degree F and the thermometer already reaching 350 degreen F then don't go any further , your temperature control is defective and need to be change a new one.
This is only the first step, you still have to check out the Hi ltd control to see how good its condition is,so far your information say it cutting out at 400 or better. But you've to be sure, because it is a safety control. Hope that will help you , God Bless.

for the latest design of pitco frialator, the manufacturer added what they called the self-cleaning burner system.during start-up, ignition is delayed so that dust accumulating in the burner face will be removed once the gas build up on burner chamber ignites, it creates a weak explosion like sound.the next time you hear that during start up, the unit is cleaning its own burner, no need to worry.

Our staff cleaned the fryer

If the main burners didn't light there shouldn't be a problem. If the main burners came on there could be some damage to the tank but there is no corrective action that can be taken. If damage was done it will usually leak cooking oil when filled. Was the gas valve turned to "pilot" or "on"?

Pilot stays lit but when you turn on temp switch

has orifice been changed? Is this a used fryer that may have previously operated on LP gas? If so, there will be insufficient volume of gas (Nat) to the burner. Also check supply pressure at unit. Make sure supply line isn't damaged or distorted in that it may restrict flow to fryer.

I am converting a pitco model 14c fryer from nat

The pilot light is attached directly to the front of the pot near one of the burners. You will see one small gas line and a set of wires. Loosen the nut where the gas line goes into the pilot light. You will have to hold the pilot light as well as turning the nut on the line. Pull the line from the pilot light assembly. Sometimes the pilot orifice comes out with the line and other times it stays stuck in the pilot light. If it is stuck take a small blade like a pocket knife and pry it out. put the new one in and tight it all back up

Flame rollout. Lit pilot turned thermostat on

Hello There:- You have two problems here. 1. the gas rolls out caused by the blocked gas flue or your deep fryer chemney needs to be check out. 2. the unit door blows open caused by what we call this delay lighting, it is quite dangerous, you should check out the whole unit , the pilot light may be too small and not lighting up the main gas as it should and when it does it is too late too much gas in the chamber and blows out through the front door. Hope this help.
