If taking the thermostat out solved the problem - I would simple put in a new thermostat for the ambient temperature conditions. Check the old "thero" by putting it in water on the stove and use a thermometer that measures up to the boiling point of H2O and see if it opens at the value stamped on the thermostat. ( 165 - 185 - 195 Etc.) I think it is simply your thermostat is faulty. Also check the ratio of your coolant to be sure it is suitable for your climate. Where is the cooling sensor for a subaru impreza?
Most Subaru's have the cooling sensor in the coolant connection pipe that runs under the intake manifold and connects the LH and RH engine cooling galleries. There are different colour sensors, what meant they have a different resistance to meet the temperture gauge, make sure you fit the same colour.

It should open with the key even if the cable won't. Does the lever have the same feel to it or does it seem like it isn't connected any more?

You may just have system failure. As a first course of action, I strongly suggest that you remove the positive battery connector and let it sit for atleast 5mins. before reconnecting it. This will reset the system and can get your vehicle back to it's normal operation.

If it's an Alpine system; turn the ignition on,off,on,off,on,off. The car can start on the fourth turn. If it's a Cod alarm:Programming or Overriding the Alarm when you have lost the remote Open driver's door. Turn ignition key to 'On' Press and *hold programming button* in (see diagram, button under dashboard) After 15 seconds the the door locks will cycle 3 times. Do not release Programming button Press lock (left) button the remotes to be programmed. The door locks will cycle one time. Exit programming mode by releasing Programming button under dashboard and turning key to off. Code Alarm Programming Button is under dashboard on the kick panel by the driver's left knee, left of the steering column. If you can't find it, it might still be tucked up in the wiring harness higher up in that same general area. The botton is recessed in a plastic ring (see diagram). This button must be pressed while programming remotes or if the battery was disconnected and the lights are flashing.
