No audio from center channel
You could check your voltages before and after you loose audio and see where the voltage changes. Working backwards from output to input. I use a signal tracer or a small wattage speaker such as a

The only way you can do this is by connecting the Cable Set Top box HDMI directly to the TV HDMI input and switching the TXSR508 to Apple TV. And if you want to hear the Cable sound through the TXSR, connect analogue audio out of the TV to one of the analogue inputs of the TXSR ( Aux or Video In ). The reason you are not getting a good picture is because of the HDMI interlink cable. Make sure that the HDMI cables you have bought are at least version 1.3a. May be one of the cables is v1.3a that is why you are getting OK picture when you connect the projector directly ( it might be an expensive cable ) . If you do not get v1.3 you may also buy v1.4 which is 3D ready.
The poor band width of the cable must be giving you a bad picture.

The 0-83 error indicates a problem with the firmware update.
Try resetting the receiver's BIOS by following these steps2:
Unplug all cables
Un-Power the receiver
Power the receiver
Before the receiver gets into the "Enter for updating" message, press Tone + CBL/SAT + ON/STANDBY. This will show you either the volume numbers or get you into settings of the receiver's speaker configuration.
Press CBL/SAT + ON/STANDBY. This will clear the BIOS and show a "Clear" message on the display. Wait until you hear a couple of clicking sounds for the receiver to turn on and off the power.
