I took over a kitchen which has the garland grill

if its gas then it wouldnt be a pilot it would be an ignitor remove top lower heat shield or look from bottom either way one way or another you have to be able to get to the ignitor and perform an ampere test on the ignitor should be drawing 3-3.3 amps any less then this and you would have to replace the ignitor yes at 2.9 you should also replace the ignitor because it would take longer to light the gas making your cooking take longer and the oven not heat properly as well if you have any further questions message me back and Thanks again Rick

Broken ceramic diffusers below grill

Failing all else, from Garland themselves. Our catering Garland has had replacements for the salamander, but they came from the local catering equipment supplies company. I have also seen replacements on ebay.

Gas meter was changed upon relighting, top burners pilots are on but oven not

under each (the) oven behind a panel, is a red button it may be a different color from time. this has to be pushed and held while the pilot light under the oven floor is lit with a match. it has to be held to allow enough heat to activate the thermocouple, which will keep the pilot on. if this does not work there may be an additional problem

Gaffers and Sattler vintage stove oven pilot 1956 W54 series similar problem

My mother had the same problem with her Gaffers-Sattler range. No one could figure out what was wrong with it. Her local new appliance repair people said to contact J.E.S. Enterprises, Inc at www.theoldapplianceclub.net. Whew; thank God for that tip. They knew exactly what the problem was and repaired the unit for her. The stove is running again like a workhorse! Here is their number - 805-643-3532.

GAS TO STOVE WAS TURNED

To light those pitots remove oven floor& access panel below the doors, for each oven will be a gas valve inside of the panel below the doors and has a red button. push that red button, light pilot inside of oven near the main burner, hold red button for 30 seconds and releas.Pilot should be on,repeat for other oven. If pilots go out after red button was held down for 30 seconds the part called the thermocoupler will need to be replaced

G60-6R24RR1

G60-6R24RS1
6 Open Burners, 24" Raised Griddle/Broiler w/ (1) Standard Ovens & Storage Base
I can't help you with a local dealer or repair but here are some links to the stores that carry parts.
http://www.webstaurantstore.com/
just go to the site and look under equipment parts and then thermostatic controls. And dig of your part there.
Or try here, http://www.partstown.com/
http://www.etundra.com/
http://www.tmeinc.biz/xgarland.htm
This last link will take you to the thermosta itself, just click on the first thread on the page.
