It sounds like low gas pressure. This is controlled by a regulator that needs checking. This is not a recommended DIY project.

From what you are saying there are no temperature probes hence it cannot measure the temperatuare and therefore cannot control it.

I can only guess but I would expect that to be normal. I would assume it will come on when the heat is on and off when the heat is off. This would be controled by the oven thermostat.

sounds like you will have to strip it to get to where the water is causing the fault

test the voltage at the terminal cooling fan, if there are the fan is faulty, if there ARE NOT , test the switch, where is loose the voltage, use the multimeter.God bless you

Power from switchboard > oven circuit cabling > supply terminals of oven > high temp cutout > timer > multifunction switch.usually the high temp, if so, check the cooling fan is working. Watch out for dodgy crimp connections on the wires (mechanical stripping can nick strands off the wire making a hot spot)

I am a retired career chef, and had this one oven with choking CO in an airport catering kitchen. We had it serviced and it was fixed. It sounds like yours is not getting enough air mixed with the gas. Adjusting the gas is one thing but the venturi to the burners can partially block and unburned gas spills over. Remove the burner and venturi and boil it out in whatever you boil your fryers out with. That seems quite common. Place your temperature sensor, alongside the therocouple of the oven, to check its accuracy.
