Hi, this manual is not freely and readily available, and Bravetti is really a daughter company for some other parent company. There is no information on how to contact them or anything of the sort. Did you happen to get this through HSN (home shopping network)? If so you will need to contact HSN and request the manual, and if they don't have it, they will have the contact information for Bravetti / it's parent company whom you can contact for the manual. However there is no way to easily get that manual and recipe book without contacting them. I would call this number to start with, and go from there 1-800-284-3100

Hello, Debi - I have not yet found replacement knobs specifically for your Bravetti roaster model. Bravetti was made by Euro-Pro, but it seems no products with the Bravetti trademark have been manufactured since around 2010.
