I"d start by pressing the Caps Lock button on my keyboard to ask a question and use that key marked Shift to capitalize the first letter of a sentence and proper names.
Extension names are programmed in SYSTEM programming. Access to that is done from the phone connected to the first extension in your system, usually 101, with a system password. In a TA Series, it's program 604. In some others, it's program 004.

Hi, I have a Panasonic
Manual to what? A 7731 is a Panasonic phone that connects to a Key Service Unit. If your KSU happens to be a TA-824 delivered in the U.S., it has a DISA card built in and the instructions are probably in the OM. There, you record a set of instructions that let the system answer and route the caller by digits dialed. If you're using a different KSU, then you may have the Auto Attendant on a Panasonic Voice Mail system do the messages and routing. That set of instructions will be in the Voice Mail installation guide.

I have a Panasonic 7731 here at my desk. It rings
Check out the system programming manual for your particular cabinet. Somewhere, like in the 40x's, there's an instruction to program ringing for each extension in day, night, and lunch modes.

You have to do 2 things: Make it ring and turn on Line Preference-Incoming Ringing line. The first is done from SYSTEM programming in programs 408/409/410 for DAY/NIGHT/LUNCH. The second is defaulted to Ringing so if the phone rings, it's supposed to work. If you've changed it, then from your idle phone you press PROGRAM and dial 22 STORE. (21 is no preference and 23 plus a number is a specific line).

The 170 card is an 8-port DHLC and it's pinned exactly like the old 123211 and the TD series systems where the first 2 pairs are the voice and data for a Panasonic Analog phone or a single line set on the first pair, and the 3rd pair is unused in the TDA. There are 8 3-pair sets in the cable and the 25th pair is nothing. Here's a link to an installation manual
http://public.carl.airpost.net/Pana/TDA/100_TDA_IM_07-04.pdf The instructions start on page 139.

If you log into mailbox 998, which you can from anywhere in the World, you can get access to all of the greetings. You just have to figure out where they are stored. This is assuming you have a Panasonic brand external voice mail.

How do use my caller
Caller ID requires 3 things, service, hardware, and programming. The hardware is a CID card with a part number ending in 93, as in TA62493,82493,TD193 etc. Then system programming in the 900's turn it on for each CO line and the phone needs to be ringing to display CID when the phone rings.

How do I use the intercom function on a KX-T7731
Panasonic analog phones plug into analog KSU's and have extension numbers beginning with 101. In additon, you can dial 0 to reach the phone programmed as Operator, and it's usually extension 101.
With the intercom dial tone (press INTERCOM or pick up the handset or press SP PHONE) you can start dialing codes defined in your number plan. You can also program left side buttons to monitor are directly select other extensions or dial codes to page all idle speakers in a 77xx phone.
Note this is specific to TA series systems, but the operation is similar in all Panasonic models.

How do I set up
You have a 7731 phone. The phone system could be any one of 18 Panasonic cabinets, but probably a TA series. Voice mail could be a BV, TVx box, or central office based. If CO based, an 824 will listen for the stutter dial tone and light the MW light on a phone. There are instructions to make that work.
So, try editing your question to give a bit more information and it makes it easier to give you an answer.

Trying to retreive messages and now it's saying
115 is the port the voice mail is on. The prompt is "enter password then #". The password is your voice mail password from the extension you're calling from. If you are trying to get your messages from another phone, press #6 * and your extension. It will then ask you for your password to your voice mail.
There are FOUR system manuals and TWO manuals for the TVA or TVS voice mail system. None of them say 7731 on the face of them, so post back with you KSU and Voice mail models.

How do we keep our
This has about 5 different conditions, so let me start somewhere.
Pretending your 7731 is connected to a recent Panasonic KSU, like a TA series, you have the ability to set the time by hand, or CID delivered in the first call after 2 or 3 AM will do it. If the sender is still on standard time (typical with VoIP delivered CID), then it will reset the clock to a different time (-1 hour) every day and it will be noticed if you set the clock and the first call of the day follows.
In addition, via programming from the main phone, you can set manual or automatic switching for day, night, and lunch modes. That procedure is outlined in the Programming Manual for your system, but it involves setting the clock times in Maintenance console 1.4 or programs 006 and 007.
If you absolutely want to never have to deal with clocks or night mode, then set 006 to manual and dial 781# on the intercom from the main phone (x101).
Note that this is only the solution for TA series KSU's.
