Potato soup
you could use a pressure cooker instead to cook your potatoes. Its always faster and potatoes get the perfect texture. Please make sure you have put the lid on as plain simmering potatoes will take time of the lid is not closed. Also you can use a steamer, I have found steaming is easier than simmering

Freezing fresh strawberries
I have two ways of freezing berries ( strawberries included) The first one is to spread the berries on a tray, put them into the freezer, wait until they are frozen. Then put them into an airtight container, back into the freezer and use within three months . The second is, especially if making a jam later, to roll the berries in sugar then the same procedure .

How to reheat a steamship round
Hello, John -
This web page from Cook's Illustrated [magazine] gives directions for reheating any kind of beef roast:
https://www.cooksillustrated.com/how_tos/9989-the-best-way-to-reheat-a-roast
If you wish to reheat the meat in a microwave oven, I recommend that you slice the meat first and not try to reheat the entire roast. Spread the sliced meat onto a microwave-safe plate and cover it with plastic wrap. If your microwave oven has a setting for "reheat", use that and run it for 1 minute. Check the meat to determine how warm it is. If it needs to be warmer, run the microwave for another 30 seconds and check for warmth. Repeat as necessary. Let the meat stand for 1 minute before serving.

Freezing ricotta cheese
Freezing ricotta cheese is possible, but it can change the texture. The moisture content in ricotta can cause it to become grainy or separate when frozen. However, if you still want to freeze it, here's a guide:
- Drain Excess Moisture: If your ricotta has excess liquid, drain it before freezing. You can do this by placing it in a fine-mesh strainer or cheesecloth-lined colander over a bowl in the refrigerator for a few hours or overnight.
- Portioning: Divide the ricotta into smaller portions if you're not planning to use it all at once. This way, you can thaw only the amount you need without repeatedly freezing and thawing the entire batch.
- Freezing: Place the ricotta in airtight containers or freezer bags. Ensure to squeeze out excess air from the bags before sealing to prevent freezer burn. Label the containers with the freezing date.
- Freeze Quickly: Put the containers in the coldest part of your freezer, and ensure they freeze quickly. The quicker the freezing process, the better the quality upon thawing.
- Thawing: To thaw frozen ricotta, transfer it from the freezer to the refrigerator. Slow thawing helps retain more of the texture. Avoid rapid thawing at room temperature, as it can lead to a watery consistency.
- Use Promptly: Once thawed, use the ricotta within a few days for the best quality. Try using it in cooked dishes like lasagna, stuffed shells, or pasta sauces where the texture change might be less noticeable.
Remember, while freezing ricotta is an option, the texture might not be the same as fresh ricotta. It's best to use frozen ricotta in recipes where the texture change won't significantly affect the dish.

Keep spices in jars fresher longer.
One way to keep jar spices fresher longer is leave the foil/cardboard on, just peel it back a quarter to half, leaving to be resealed every time you replace the plastic/other lid. Flip-top/other caps allow subtle air/humidity leakage inside over months.
You just have to practice rotating and tapping the jar and contents with a finger to dispense.
How to cook beetroot
To cook whole, wash but don't peel, then cut the stalks to 2.5cm and leave the root at the bottom; if either are trimmed too much, the beetroot's colour will bleed. Bake in a low oven for 2-3 hrs, either wrapped in foil or in a little water in a lidded casserole dish.
