I have the intermatic TN 300 model lamp timer and

This answer is a little misleading. ALL the pins between the time you want the lamp on to the time you want it off must be pushed down. In other words, the lamp will light only when the timer reaches a pin that has been pushed down. You could have the timer turn a lamp on and off and on and off and on and off, etcetera, if you had one pin down, the next up, the next down, etcetera. It's a good visual indication of what the lamp will do: pin(s) DOWN = lamp ON; pin(s) UP = lamp OFF.

How to set a timer to come on at 8am off at 8pm

you set the arrow to the correct time. You then pull the green and red plastic pointers up and out of the device and push them back in at the times you want it to activate. I believe green is off and red on but I may be backwards on this. Some come with multiple on and off pins you would simply remove these or pull them up so they do not trigger the timer

Intermatic 1725 Timer. It runs a 220v pump in SIM mode. I would like to time some 120v lights, can I do this in IND mode and have 120 and 230 volt circuits?

Reading the broad description I would have said "yes if you can identify the input and output of each separate circuit. However the description says
  • Selector switch to determine input voltage between 120-277 VAC
So you have to select the voltage on it. It appears there are also various model differences to the 1725 series designated by a letter at the end after the '5'. How do I get this timer to stop ticking? I do not want to mess with electrical wires, etc.

I would suggest you get a qualified electrician to look at this. If you've not touched it in 20 years the mechanism inside may need checking for age related faults. Even when not used some parts can cause issues as they get old.
