I have an Audiovox APS787. The car / system won't respond to either remote, and it's now impossible to disable the alarm, even after starting the car.

First make sure the batteries in your remotes are good. If they are good then I would say you have a defective unit.

My car alarm key remote

This might sound stupid, but have you tried first replacing battery in remote, this could cause this instantly, just like a TV remote. First try that. Hope that solves it right away.

I have the alarm system hooked up, i have the

The seven flashes of the parking lights when you attempt to remote start is the tach signal not being programmed. If you hooked up the tach wire already, turn the ignition on, press and release the programming switch three times. Turn the key off, press and hold the programming switch and start the car. Continue to hold the programming switch while the vehicle runs. The parking lights will be flashing while the tach is being programming. Hold for at least 15 seconds for a good signal. This allows the engine to "smooth out" into a normal idle rpm.
If the parking lights are not flashing, the tach is not being programmed. You may have skipped a step during the set up for the programming or, you have the wrong tach wire. If you went to a injector or coil wire, it is the uncommon wire. This means that there exists two or three wires at the injectors/coil packs. One or two of the wires are the same color at all of the injectors/coil packs and one wire is a different color at each injector/coil pack.

You have to find the program overide button and reprogram the remote. First you turn on the ignition and then press the button 3 times you should have a confirmation chirp and then press the lock button 4 times ( if you have 2 remotes press it 2 times on one and 2 times on the other) then press the program button again and press the unlock 4 times( 2 and 2 if you have 2 remotes) and press the program button again and press the remote start button 4 times( 2 and 2 if you have 2 remotes) and do the same for the last button and you are all done.
