Have an 80 evo motor only running on one cylinder.
When riding, the motor shut off like i had shut the key off. i hound that the battery was bad but, after replacing the battery the motor is only running on one cylinder. i have an 80 evo motor on a softail.

Does the motor turn freely (i.e., are bearings good/bad) Is the motor quickly overheating when you ride? Is anything rubbing/ interfering with linkage from motor to wheels? After you have lost power with the scooter, immediately have battery voltage checked. If low, then you have at least one bad cell in the battery pack.
Sounds like overheating alright. How is the weather? If its over 80 it might only be that. If it is cooler, then if you are running the recommended volt/amp battery pack you may have a bad temp sensor on your control board. If you are using a higher powered battery to boost speed then you will have to cool the motor or get a more powerful one that can take the load. I do not have that mode bikel, so I can not say if it is a common problem, It is not a problem with my 24 volt Lafree.
Those safety switches you mention above is a good first place to look. Possibly the magnetic switch that makes connection with the battery and the starter needs replaced. When you jumped the starter to turn the motor over did you have the key turned to ignition? No spark can come from a low oil shutdown switch located somewhere on the lower part of the engine (either low oil or bad switch), if the key was on. The switch can be bypassed to test its condition. Keep us posted.
It could very well be separately fused; I'd check the fuse box first to see if one is marked for that feature.
Not sure about yours but typically self-leveling features stay active even with the ignition off and can kick in to adjust for in-or decreasing loads.
The Packards in So. Bend, IN used to often have run-down batteries thanks to the hoodlums I ran with.
