This is just your idle adjustment. all you have to do is let the engine warm up to operating temp., then raise the idle. you may need to remove your air intake and filter to get to the adjusting screws. they are usually on the side of the carburetor, right in the center. they may be somewhere else though. some carb's have a cable mounted near the carb to adjust the idel. im not familiar with your specific model. but once you determine where the idle screw(s) are, turn them in clockwise with the engine running. go about 1/4 turn at a time until it will stay running without having to give it throttle.

Bike starts right up when choke is on or off. as soon as i giveit gas it stalls out and dies. i just put fresh gas in it. also, it only has about 3,000 miles on it. it's a yamaha v star 2006 1100...

There is a fuel setting issue and the mixture to the cylinder is not correct. It can be problems in the carburator, the air / fuel mixture settings, possible there is dirt clogging within any ports and choking.
When the throttle is raised there is insufficient fuel to the cylinder and so it shuts down. check the spark plug, the gaps and the timing.

V Star 1100 - after cruise speeds engine rpm very slow to retun to idle after letting off throttle.

Check to be sure the cables are not binding.
LUBE those cables!

You can buy a device that is simple and not expensive to lube the cables.
My V Star-1100 custom did exactly the same thing after about 4 years.
Seems the standard service package does not include lubing the cables!

After a generous lube the throttle cables and sticking slow return vanished.
Pleasant surprise how easy the throttle and clutch cables worked too!

Good luck!

Starts fine then stalls when I give it any gas

if it only runs w/choke on then your jets are plugged...fuel should have been drained before storage...time for carb clean i suspect...Tim
