Is the gauge showing hot or is the vehicle information center showing the hot message? Most likely a bad temperature sending unit for the gauge or ECM. Im not sure if GM is still doing this but they used to install two temperature sensors on their engines. One for the gauge the other for the ECM. A repair manual for your vehicle available at a local parts store should have that information. Should be a simple part to change if you have a few hand tools. If GM is now using a single sending unit replacing it will take care of your problem. Doubt it is the engine thermostat. Engine temperature would still take a while to reach HOT status if thermostat was stuck closed.
You need a new thermostat in your engine now if your getting sluggish engine performance and its over heating you might have a blown head gasket and hello 2 grand mechanic bill :(

THE FAN HAS A SEPERATE RELAY FOR A/C THAN ENGINE TEMP.
YOU COULD HAVE A RELAY PROBLEM OR A COOLANT TEMP. SENSOR PROBLEM, OR POSSIBLY EVEN A THERMOSTAT PROBLEM. THE BEST THING TO DO IS HAVE A TECH. CHECK THE VEHICLE WITH A SCANNER TO SEE WHAT THE COMPUTER IN THE CAR IS ACTUALLY SEEING TO SEE IF THE RELAY SHOULD BE COMING ON OR IF IT IS ACTUALLT COMING ON AND THE FAN IS NOT RESPONDING.

it is more than likely the freon level is low. usually when it is extremely hot outside the compressor has a hard time keeping it cool. service the a/c and check for leaks.
