Both gauges are all showing to the right hand side as full in fuel and hot in tempature

Outside temp sensor located at inner fairing, it is tied to left fairing frame just above cigarette lighter.
On OEM parts,
Air Temp Gauge pin#1 = Orange +12 Volt
Air Temp Gauge pin#2 = Black - ground
Air Temp Gauge pin#3 = Air Temp sensor pin#1

try to check yor meter conection at the rear of your meter.there is a loose connection due to vibration

Sounds like you have a ground fault. I once had a car with a faulty ground wire on the headlight, when I put high beam on the speedo would jump to 170km/h and the indicators would glow dimly. Sure sounds like a similar ground fault to me, check all the ground straps, from the headlight or anywhere else you can think of.

normal op temp should hover between 150-180. sounds high huh. it will stay close to 150 most of the time but look out for more than 180

I have a few 1977 GL-1000 bikes.
I thought one was overheating but it turned out that the 9 volt regulator was fried and was putting 12 volts to the temperature gauge. Temperature was really OK. The fan switch is probably not lying
