Typically most gear drive motorcycles use the same type of system. There will be a small bolt either 8mm or 10mm or a Phillips head . That will be at the bottom of the gear case just below the rear axle. Remove the bolt and let it drain. There should be a smaller screw or bolt of some sort above the axle. That will be the " weep " hole. Once you finish emptying the gear box. You re install the drain plug and fill the gear box through the weep hole. You fill it til it starts to come out past the threads. That is the correct fluid amount. Re install the weep hole plug and you're good to go.

Use 10w40 motor oil. Stick with the major brands; Pennzoil, Quaker State, Mobil or Shell.

What grade transmision oil should i use in the rear wheel hub for the drive shaft on my xvs1100

Any quality 80/90 hypoid gear oil will work. If you use a synthetic hypoid gear oil the rear end will have less friction, generate less heat , and last longer. Final drives are expensive and do not use much oil , maybe 1/2 cup. I recommend changing the rear end oil every other oil change.

There is a clanging noise when i put it in gear and can hear it while driving is it the rear end or universal joint

Check rear-end fluid level and play in rear pinion gear.
Check universal joints for play. If play is in pinion gear change rear end fluid and add a full bottle of LUCAS oil stabilizer, will quiet rear end noise.
