The pump is mechanical and pumps to the valves and other bearings that needs it. The oil level sight glass is only for that, you won't see it surging around like a washing machine. You have probably moved a wire when installing the new lights and that is causing the oil light to come on. If they are LED replacements, they can cause a whole lot of problems due to their electronic circuitry that is in the base cap of every bulb..

The fuel petcock may be the problem. It works by opening a valve to let gas reach the carbs. It does this using a vacuum diaphragm drawing vacuum from the carbs. A gs500 will not work very well without an airfilter either. The carbs rely on proper vacuum to operate and a poor or no air filter will make a gs500 run very bad. Gs500s are air cooled also. If none of this solves the problem do a major tune up. Still nothing then take it to a mechanic. Taking shots in the dark gets expensive.
Well one area I recommend you to check is the power jets in the carb. Overall check your jettings because you are starving on high end. To test try closing your choke half way and see if that gives you more pull ower over 6K rev. Good enough?

MC, have many switches to fail here. (called safeties)
using voltmeter and service manual is short work.
lacking that is GUE$$ING slog.
battery bad or intemittant or lugs rusty /loose
starter button bad.
fuse blown
key switch bad
neutral switch bad.
kick stand switch bad. (each bad means wires to it bad too)
clutch lever switch bad.
starter relay bad.
starter bad. (can be hot wire tested, key in pocket)
You have replaced the battery, the rect/reg twice and the stator twice. Wiring is thought to be OK the only part not checked is the magnetic rotor. These rarely go wrong, to see if it is showing a strong magnetic force try putting a screwdriver blade near it.
Some bikes used to have brushes in the alternator similar to a car set up these can cause problems if worn or loose. If yours is a 2 part (air gap) alternator having just the rotor and stator try this. Unplug the alternator connector that links to the reg/rect. Get a multimeter and set to continuity ohms find a good earth point on the bike and connect the black meter lead to it touch the red lead to each contact in the alternator connector in turn if you get no reading or buzz from the meter the stator is OK. I would then look at the battery. Make sure the battery is able to be charged, do not use a car charger ever, you need a charger that is for motorcycle use only, less than 1 amp output. Never try to jump start the bike from another vehicle, when removing the battery disconnect negative first when fitting the battery connect positive first. Good luck.
The most likely thing is a sticking clutch. With the ignition off, can you drop it into second gear and push it with the clutch pulled in? You say you put 'new petrol' in, so it sounds like it has been stored for a while. Clutches will often stick as the clutch plates have been under pressure for so long. Are there any other light on the dash display? FI refers to the Fuel Injection system. If it is on and staying on it is possibly an electronics fault detected by the ECU, (Electronics Control Unit). You should get a good mechanic to look at this as they will have the correct diagnostic tools.
If the spark plugs are black, it is running rich, end of story, you are dumping too much fuel. You need someone that can do carb tuning on the bike. There is help in the Volusia Forums and it appears to be a known issue..
