How to do a chain adjustment
From the pictures I have seen this bike has shaft drive to the rear wheel no adjustment is necessary. If you are referring to the cam chains sorry I don't have any knowledge on that, you need to get a workshop manual.
Headlights go dim when try
The headlight is supposed to turn off when you push the starter button. If you push the starter button and the solenoid clicks, the button is good. If there is no power going to the solenoid you can try disassembling and cleaning the button. Take
a wire and jump the two posts on the solenoid or touch the two cables
together. If your starter works, then you need a new solenoid. If you
hold the starter button and tap on the starter with a plastic hammer and
the starter works you need new starter brushes. Anything else wrong
with the starter and you need to replace the starter assembly , unless the
manufacturer sells replacement parts so you can repair the starter. most manufacturers only sell replacement starter brushes.
2000 vtx 1800r running rich
Have you changed the oil lately? If there is to much oil in the motor the bike will push oil up into the airbox and foul the air filter out. This will cause the bike to run rich. check the oil level and then drain any excess out to the proper level. You will need to clean or replace the air filter in order to make the bike run well.

Set them on the firmest selction.
On my bike i use a soft setting when i ride alone and a firmer setting when carrying a passenger.
340 lbs is a big man, use the firmest selction.
If that is too hard drop one setting, but you don't want to be too soft and bottom out the rear tire to the rear fender.
Could low oil stop it
Honda power products (generators specifically) are designed to shut down when low on oil. Adding as little as a tablespoon of oil will allow them to run again. It is possible that they could put this system in a motorcycle. But it is normally only used in stationary engines. Try new plugs. If the plugs are wet you may have just wet fouled them.
Raw gasoline coming out by
Check your oil it is probably full of gas too. If you do not turn off your fuel petcock and a needle sticks in your carburetor this can happen. Gas flows into the cylinder and fills the engine with gasoline. If you tried to start the cycle you may have fouled your air filter with gas and oil too. Be sure you drain your pollution tubes. This can happen even in new motorcycles. Always turn off your gas when not using your motorcycle.

You have a fuel injected motorcycle. It is made to work with a stock intake and exhaust. When you alter the stock system it does not know how to compensate for some of the conditions that will come up. Most people buy a Power Commander and program it to compensate for the changes that the stock system will not compensate for. If you already have a Power Commander then you should hook it back up the computer and reprogram it or look on line to see if there is a better map available for the changes on your bike. If you do not have a Commander get, get one. If you already have one, get your program disc and cables and re-map it or take your cycle to someone who can.

If this bike has more than 15k on it the stock springs are likely worn out. Replace them with Progressive Suspension springs. They will last longer and the bike will rider better. They are also less expensive than stock replacements.
No brake/tail lights and no lights on dash. have
There's a fuse just for the items you say aren't working (fuse 'B', 10 amp). If the fuse is good, check for battery voltage at the fuse with the ignition switch in the "ON" position. If there's no voltage, then you most likely have a bad ignition switch - or corroded/unplugged harness connectors somewhere on the bike. If there is voltage at the fuse, then I suspect there's a ground connection to the bike's chassis that has broken.

The Power Steering has failed. There has been a factory recall for a suddenly failing electrical steering shaft, that could cause the rider to loose control. This does not have to be your problem but anyhow either the electronics or the pump failed. Error codes or messages usually have to be erased by a simple reset procedure or disconnecting a plug, after repairs are done.

Hiss works but
On the bottom of your speedometer on the left side there is 2 buttons
press the far left one for a couple of seconds and the light should go on
