DOES THE ENGINE TEMP LIGHT SWITCH HAVE TO COME ON

most likely just a broken light globe, try replacing that first, second it could be a faulty temp sensor switch.
But i do not think it should light up when you turn the key on. only when the engine gets over hot.

I hold my clutch in and it is already in neutral as I shift into 1st my bike shuts off what could that be?

Check your sidestand switch. It may think the sidestand is still down so cuts the engine out.

Why is the 3 prong plug from the stater to the regulator melting

Probably corrosion/high resistance in the connector pins and sockets. When cleaned/repaired coat with dielectric grease.
