No resistance on clutch lever (2000 Millie RSV)

check the slave cylinder then bleed the clutch if you have a miti vac vacum pump attach the pipe to the bleed nipple and pump to full vacum then with the fluid resiviour cap off and filled open the nipple

Which sensor do you go off when wiring in a manual

This varies depending on your model of bike. Typically, the temperature sensor (technically, a thermostatic switch) that controls the fan is located somewhere on the radiator of the bike (Honda VFR, for example), or near the water pump (Aprilia Mille).

Make sure you understand the fan circuit before trying to wire in a manual switch -- some thermo switches turn on the fan by shorting the circuit to ground, while others complete a circuit supplying positive voltage to the fan.

After riding for an hour I parked (2000 RSV Mille)

Carburetor float stuck, probably some sediment that got past the filter. If not that then check your fuel lines coming from the tank to the fuel pump or filter.

Clutch wont bleed up

To bleed these properly, Firstly remove the resovoir cap,you then need to remove the slave cylinder, tip it to the right slightly just as if you were leaning into a corner, Whilst holding it in this postition, compress the piston all the way in and let the spring push it back out, do this about 5 times and you should see air bubbles pop into the resovoir, makes sure the fluid level is ok, Too little will draw air in, too much and it will overflow onto the bike !!! You don't need a mityvac system, just a LARGE syring and peice of pipe, push fluid in via the bleed nipple on top of the slave cylinder and as air always goes up, it will automtically rise upwards to the resovoir.
DO NOT use 5.1, normal dot4 is better in brembo hydraulics, also check the slave cylinder seal is ok, they are prone to wearing and will make it virtually impossible to bleed correctly, New one is £12 from Aprilia..

Erratic clutch

are the gear change problem are from the clutch not fully disengaging. if this is a hydraulic clutch re bleed again. if clutch works good when engine cold, but not when hot, clutch itself needs to be adjusted or plates replaced
