If your sure the cooling system is full than i wouldn't be surprised if you had a head gasket that has failed.
This would explain the water noise, and overheating.
With the engine cold remove the radiator cap, start the vehicle and let it idle. continue to monitor the coolant level in the radiator. top it off if it gets low. If you see a constant perculation of air bubbles coming out of the radiator than the head gasket is bad.
Sometimes you can also smell the radiator or the overflow. If it smells like exhaust than the head gasket is leaking.

Thanks airjer. Believe it or not, I squeezed the upper hose (and visually confirmed air bubbles in the resevoir tank) and let the car sit overnight. Fired it up this morning (drove 7 miles) and noise was gone and temp gauge pegged dead-center. Now, whether or not the problem is corrected is yet to be determined: I will have to drive it for longer periods of time, ckng coolant level. My next step (before driving this morning -- I drove this morning "just to see" if excess air in the sys might have been the culprit) was going to be to open the bolt on the manifold and see if I could bleed any air. Anyway, thanks for your timely reply and, should anything go awry, I will be back here asking questions....
