After replacing the new O2 sensor, the codes need to be cleared to turn of the check engine light. it sounds to me that they only installed the sensor and because in that moment the check engine light was off they didn't erase the code. Yes I think your car is safe to make those trips, but you should take the car to the workshop so they can erase the code whenever you can.

BECAUSE FUEL MIXTURE WOULD BE TOO RICH CAUSING CATALYTIC CONVERTER DAMAGE CAUSING IT TO OVERHEAT GET RED HOT UNDER CAR CAUSE FIRE AND YOU WOULD HAVE A LOT OF FUEL CONSUMPTION .I WOULD NOT DRIVE CAR.BETTER TO USE A RENTAL CAR FOR LONG TRIP GET CAR CHECK OUT AGAIN AT THE DEALERSHIP.
DEALERSHIP SHOULD HAVE ERASED CODE AFTER THE REPAIR.IF THEY DID AND CHECK ENGINE LIGHT KEEP POPPING UP YOU HAVE PROBLEM ELSE WHERE I WOULD NOT DRIVE CAR 5 HOUR TRIP IF CHECK ENGINE LIGHT FLASHING. O2 SENSOR COULD BE OKAY IF PCM FAULTY OR YOU HAVE SHORT IN SENSOR WIRING O2 SENSOR NOT GOING TO WORK RIGHT.

I just drove a short distance and the check engine light is now off. Would the engine light go on and off if the codes were not cleared? Will talk to the dealer in the morning and see if they cleared the codes.
Talked to the mechanic at the dealership and have an appointment, this afternoon, to look at the wiring to make sure it checks out. I would just see what happens in the next few days after driving it but I have to leave town for a few days. Oh and btw- the check engine light always turns on or off at start up never while I am driving. I am not sure if that helps define the problem any better. I will let you know if they find anything.
The problem was a bare wire a little bit higher out of the visual inspection range. The car is fixed and I am happy.
