Its not necessary to replace the axles due to periodic maintenance or because or your mileage. I would however check both front wheel bearings as they are known as problem areas for venture vans. Also check the CV boots at both ends of your front axle shafts. If they exhibit rips or grease can be seen leaking from them, then I would recommend replacing them. It is usually cheaper and easier to replace the entire axle, rather than have just the boots repaired. But if no obvious problems are present, there is no need to simply replace them.

If this all happened after pan gasket change, chances are you knocked the oil pump pickup and the pump is sucking air. You've lost oil pressure. Fix that. Do NOT add washers. That's not your problem.

what is the condition of the rest of the van? how does it ride, steer, shift and so on?
$2,700 is a lot less than replacing the whole van and you could end up buying someone elses headache if you go used..
if it ran really well before the gaskets went i would invest, if it had other issues i would trade it in

Service engine soon light is alerting you that a code is stored in your computer. If not checked out it could be something that will have an effect on other parts and may cost mor to fix. Most auto parts stores will check it for free.
