If the coolant tank is full and the light is still coming on the coolant level sensor float may have sunk giving a false reading of an empty coolant tank. This is only repairable by replacing the coolant tank.

the coolant tempurature sensor may be bad. it sense temp. of engine. if bad it will send wrong info, to pcm. check the wiring to sensor also. ( CTS ). it could be the guage but i do not think so. g00d-day ! if all fails change thermostat.
Most cars you don't have to remove the entire panel. the side mirror has it's own small panel. It is just clipped on. just pry it off to access the nut to remove the wing.
Replace your spark plugs and spark wires. Check you tire alignment and engine oil levels and replace your fuel filter. Check your transmission fluid and coolant levels and brake fluid levels. Cabin air filter replacement is also recommended. Check your battery output voltage and see if an recharging is required.
did you take to same dealer each time? if soo try a different dealer, all dealers are not the same. also try emailing rangerover company and see what they say
