Fanbelt noise from that year Grand Cherokee usually indicates a bad idler pulley. There are two of them and they should both be changed at the same time. Have them checked out.

Fan makes a loud squeling noise.

Suggest carefully spraying a fan belt dressing onto the fanbelt. If this helps stop or reduce the noise, it most likely indicates the belt in question needs to be tightened or replaced.

If not, check bearings. (This a another "how-to" question.)

My Mazda Verisa has just start making a grinding type noise when it's turned on. It sounds as if it's coming from the fanbelt area but I'm no expert at all. I'm thinking it's either a worn fanbelt, maybe...

A grinding, gritty noise usually means a bearing is worn out. The best advise is drive it straight to your nearest good mechanic and get it looked at!
If the bearings on the water pump collapse the timing belt could slip causing VERY expensive damage. Might be worth getting the timing belt changed anyway while he's got it off.

New fan belt and the car is making a loud squealing noise

Either the water pump is bad or the power steering pump or the tensioner or maybe the tension on the belt is insufficient. If you have air conditioning, the bearing could be bad in that but that's a bit remote.
