If the block and radiator has been completely drained, it will hold slightly less than 2 1/2 gallons. If you are refilling from a something like simple water pump relacement you will need about 1 1/2 gallons.

SkyActiv engines, regardless of displacement, never fill completely (according to the dipstick) using the recommended fill volume. Your experience using 5 full quarts in a 2.5 liter is exactly what others have experienced.
As you have not said which engine is fitted luckily it is the same for both the 2.9CRDI and the 2.5,the coolant capacity is 9.4ltrs, as far as I know there isn't an engine drain plug for the coolant, removing a hose is normally enough to drain it when you open the top engine coolant cap (DO NOT OPEN ON HOT ENGINE).
2.0L DOHC engine: 6.8-7.5 liters (1.79-1.98 gallons). Different years and different engines vary the capacity, but 2 gallons will likely take care of most Sportage coolant fills.
Coolant capacity
is 7.7 qts./7.3 liters, for a 2.4 liter 2003 Kia Optima. You will not be able to get all the coolant out of the engine, unless you do a thorough engine drain and flush. If you only plan on draining the radiator, you will need less than 2 gallons mixed total to refill it, since some coolant will remain in the engine block and heater core.
