SOURCE: car idling funny and stalling
there is a recall on 2000, 2001, 2002 model cougars for the fuel pump assembly. you might want to check on that.
SOURCE: Check engine light. got 2 codes P0172 and p0175.
Unclip the 02 harness, then take out the 02 sensor. 5 minute job.

The sending unit for the oil guage will cause the oil guage to fluctuate this is caused from some sludge build up that is more than likely stuck in the sending unit tube. Use Gunk motor flush on your next oil change this should help the oil guage problem.( make sure you read the direction on the back of the bottle)
As for the check engine light you can take it to Auto Zone and have them scan the computer. Sometimes the EGR valve will build up with carbon causing the valve to stick slightly open which will make the idle on the car fluctuate up and down. Its also possible you need O2 sensors.

when you disconnect the battery.when changing the starter.you lost computer memory.the computer is going through relearning its program.it effects idling.should clear up after driving around a day or two.if it keep stalling take it to the ford dealership to relearn to idle.

Codes that tell you your engine is running lean can be caused by a number of things. First thing to do (and cheapest) is to get some fuel injector cleaner and run it for awhile. Dirty injectors can cause these codes. I recommend lucas brand myself but there are several different cleaners to choose from. The second thing is checking your vacuum lines. If there is a leak it can cause the engine to **** in too much air and cause the codes. Anything beyond that gets into alot of mechanical work and should be done by a certified technician

I think your sensors are pattern parts and the readings /resistances are not the same as the original parts ,try some bosch units is my first suggestion ,
