You should be able to see two (2) small grooves on the face of your VW radio, one on each side of the radio. You will need to insert a small flat tool into both slots simultaneously to release the radio from it's cradle. A small flat head screwdriver might actually work.
Depending upon the radio being installed, it might actually fit into the existing cradle, or you may have to partially disassemble the dash in order to switch cradles.

Most aftermarket pioneer cd/radio decks have the electrical connector for the antenna that I've seen.
Is this a cd only deck, or does it have radio functions?
Did you use a new harness wiring adapter to get the pioneer radio to work with the old harness?
There should be a color coded set of wires for the power antenna on that. And, then the Pioneer radio should have wires that were labeled for the power antenna.
The interior of the vehicle is like a model. It will come apart piece by piece but you have to be very careful when removing interior panel covers. Most just have clips so they can be installed or removed without screws. The stereo should have screws and 90 percent need a socket instead of a screw driver
