First thing is have the AC charge checked by a shop, if that is OK then the AC compressor low side pressure switch may be defective or the compressor relay is defective.
You have a flow restriction,the orifice tube,(inline filter) on the low side(suction)a/c hose.Check close by the dryer and lines for freezing over,if so evacuate,then flush a/c system,install new orifice tube and recharge with new oil and freon.

Is the compressor kicking on? If not and the pressure is in the normal range then I would say that the low pressure switch is stuck. It is located on the canister right beside of where you hook up the freon. Unplug it and cross out the plug and see if it starts then.
the oil pressure sender unit tip is got sut build up remove it, clean or replace it. when oil is thin it gets right in but while its cold and thick it wont trigger the sending unit. causing light to come on.
if its a new body style (with the round front - i am assuming because it has a 5.3) then it takes 2.0lbs (.91kg). Make sure you check your fan clutch to see if it spins freely or has some drag to it. the fan clutches usually fail causing the compressors to come apart, the failed ones spin freely.
