Thermostat is not the problem, replace the gasket on the intake, and plenum,if it has a plastic intake, replace it,you will find at the e g r port,it is distorted, and the new intake will have a stronger renforced intake, you can buy it at napa auto parts.

99 GMC SAFARI V6 ,186k- CAN'T KEEP THE WATER RESERVOIR AT THE RIGHT LEVEL. NO OTHER PROBLEMS, OTHER THAN WHEN AT CORRECT LEVEL. WILL EVENTUALLY LEAK OUT UNDERNEATH CAR WITH SMELL ON EXHAUST?

Can you physically see it leaking underneath the vehicle? Or is it condensation dripping out from your air conditioning? If you just smell it you may have a blown head gasket. How often are you adding fluid to the reservoir?

Over heating

Bubbles coming up in your coolant resevoir tank, and either consistent or random overheating, could indicate a head gasket leak. Check your oil dipstick, and inside valve cover where you add oil. If engine oil looks like chocolate mousse, it's a sure indicator of head gasket leakage.

Over heating

usually overheating problem arises from radiator plz flush the radiator with the radiator cleaner available in the market with directons available. usually you shake the cleaner open the cap and pour the full content into the radiator and drive for few hours. leave it to cool and rince with fresh water a couple of times till the cleaner is totally removed.
also wash with high pressure water the fins of the radiator as it gets choked from flies and insects.
pour fresh coolant in the radiatorthe
the other reason for this heating could be faulty thermostat located at the lower portion of radiator which restarts the when the engine hear exceed the prescribed temperature and it ***** dow automatically when cools. it goes on.
WARNING:- RADIATOR FAN CAN START ANY TIME SO PLEASE KEEP YOUR HANDS AWAY FROM THEM AS THEY CAN SLICE YOUR FINGERS COMPLETELY.
other problem you can view is when the engine is cool and the radiator is cool open the radiator cap and then run the engine to see if air bubbles are visible- coming inside the radiator. if that is the case then you have to go to the workshop and get the engine overhead gasket replaced.
other problem could be traced like when you come home after a drive check all the wheels if any of them are heated up excessively they could heat like an electric iron so be careful if that is the case then get your brakes overhauled.
ecsessive gas charged in car ac will also heat the car.

Overheasting changed termo still overheating

this is almsot certainly caused by a leaking engine cylinder head gasket, have a shop do test for the presence of combustion gases in the cooling system. U can also buy a test kit from Napa, I hear that they work fairly well, but i still prefer using a gas analyzer to be sure.

2001 Hyundai Accent. Heating and stalls

If the water tends to keep going down then there has to be a leak somewhere. Try also looking at the hose coming from the overflow tank and see if the hose might be kinked. You might also be blowing antifreeze out the tailpipe. Take a look and if there is bluish white smoke then you have confirmed that theory,

Coolant problem (leaking somewhere)

If this is a 4.8, 5.3 or 6.0 liter they are notorious for water pumps. The 4.3, 5.0, or 5.7 liter are known for intake gaskets. Both leak slowly at first and evaprate from engine heat quickly.
