If your bonnet will not release, there is a rubber plug inside fender located up in the wheel well under the latch. Remove the plug, stick a screwdriver up and pry the latch back. The hood / bonnet will open.

if you have got the all alluminium xj350 then the common cause is the latches sieze plus the cable corrodes on the inner wing securing little clamp cos it wears through the protective coating. try getting someone pushing down on the front of the hood whilst you pull on the release lever
What you can try is to have someone inside of the car pulling on the latch release while you push the hood up and down. Sometimes this will cause the latch to release..
