You need to get the thermostat changed. The thermostat controls how much coolant runs around the engine and sends signals to your temp gauge to indicate how hot the engine is.
if the thermostat is faulty it wont sent signals to the temp gauge and wont open up to allow coolant to run around the system. Your heating is run by coolant, behind the dash there is the heater matrix hot coolant runs into the matrix which gets blown inside the cab.
Fitting a new thermostat will fix all the heating and gauge problems. if your technical minded you can buy a thermostat from an autofactor (or ford, but they are expensive from ford). a garage will charge about £30-£100 ish for a new one.
