I have a 2005 Ford Escape. There is a ''hissing'' sound that comes from behind the steering panel that stops when I touch the brakes. Any clue what this might be? Thanks,

where is hissing sound coming from under hood or behind tire the brake booster is a vacuum and another thing is a caliper may be leaking or maybe brake line
It sounds like the rubber diaphragm in the brake booster has developed a leak producing the hissing / sucking noise. The only option is to replace the booster as a complete assembly as they need specialist tools to repair. If the booster fails completely you will still have brakes but the pedal will be very hard and it will take a lot of muscle power to stop vehicle. Best to have booster replced soon before you experience situation described above.
I have had the same problem with my 05 Escape and it was actually the rubber boot behind the brake pedal that was torn if I started the car and pressed down on the brake with my hand and let it up I could feel the air coming off of the boot.
You have done the brake booster.Its a mechanic shop job.If you jab the brake a few times in a short sequence,the motor should slow down just a fraction.It might.Hope this helps
The power brake booster has a bad valve. I can't suggest where to find a new valve for it, but you can buy a rebuilt replacement. They are usually not hard to put on.
