Yes thermostats wear out. make sure your cooling fans are not running at the low temp you have. you may have a bad temp sending unit. also you gauge send ing unit could be bad.

Remove the thermostat and place it in a some sort of container that you can use to boil water. heat the water and watch the temp (you will need a cooking thermometer to monitor the water temp.)
The thermostat should have a number stamped on it which is the temp it is supposed to open, most likely it will be 190, might be 180. watch the thermostat as the water temp approaches 180 and up.....you want to see when it opens. If it is bad it will probably open late (above 190) or the opening will be small and not allowing the water to flow as it should.
The simplest solution is just to buy a new thermostat and gasket. They should cost about $15
It runs a 195 degree thermostat, not to worry,normal operating temp. Gm says they are more "GREEN" when the temp is up,can't change the thermo to a 180 because the computer is set for 190 to let the fuel trim from the o2 sensors to help with mileage You may find it runs cooler with the AC on due to the electric fan running.
195 degrees is the typical high end on the thermostat (when the thermostat opens), so the temp gauge should read a max of 195 degrees, give or take a few degrees. Some people replace their thermostat with a lower temp one, such as a 180 degree one. Then the gauge will read lower (approx 180 degree max). So the range is typically from cold at start to just under 200 degrees.
