First guess is that a motor mount is broken and lifts one side of the motor just enough to pull on the throttle cable.
Second guess is that the cable return spring is broken or missing. It pulls the injector throttle body lever closed when the gas peddle is released.

Car randomly accelerates without pushing down on pedal and cruise control is not working

It sounds to me like a problem with cruise control? Turn it off and/or unhook it, drive it a bit and see if accelerating problem goes away? If it does, you need to troubleshoot the cruise control. Any applicable trouble codes?
That sounds dangerous to me, I'd disable the cruise control till you find the problem.
I don't know what testing you have done?

My truck starts and stalls and will not idle

Try increasing the idle speed. If you don't know, this is how to do it.
Open the bonnet and ask someone to push and release the gas pedal a five second intervals.
Observe which part is moving.
Yo will see a small adjustment screw on that lever. You will understand that by adjusting the screw you can increase the gas supply to the engine.
Slowly rotate the screw while the engine is running. (If the engine doesn't run in idle state as you have explained, ask someone to keep the pedal slightly pressed. After increasing the gas supply, ask the person to release the pedal).
Adjust it further to get a smooth running condition at idling.
Also check whether air cleaner is blocked.

Did complete brake job on 1997 Ford Escort wagon no abs rear shoes, drums, lines, wheel cylinders,even changed the block at the rear were the lines go in & out of. Front lines hoses pads, caliplers...

is brake pedal hard to push down without engine running ,if so proceed to step two and thats to start engine and then push on brake and if pedal softer to push then the servo is working ,now if excessive pedal travel with engine running then remove the rear drums ,make sure the outside lip is cleaned out and then adjust the brake shoes manually till they rub when you turn the drum ,this will cure it but remember that it has to bed in of course new pads brake disks ,new shoes and drums it has to bed in so give it a chance .

Wont idle or rev

theres a throttle position sensor and one part is connected to the accelerator pedal underneath,its like a rheostat in a radio,when you press on the gas pedal it sends a signal to the computer to increase the rpm's (just as a radio increases in volume),if this component opens up,it will not increase rpm's with pedal pressure or change

Sputtering Engine

This is normal. Four cylinder engines do not have a lot of horsepower and torque.

When your a/c compressor and cooling fan kick on, there is a load on your engine that casues rpm to drop. When it kicks off, the load goes away and the rpms go back up.

Your a/c system is the cycling type that increases fuel economy. It should cycle 4 to 7 times/minute at 70 degrees F.

Please rae as fixed if this answers your question.

PS. With the a/c (and defrost) off, it should not drop any rpms.
