2003 GMC Yukon XL blower fan intermittently doesnt turn on

Could be the blower motor, the resistor, or the control on the dash.
You'll need to check the circuit for voltage when it fails to work.

My 2001 yukon front AC fan only blows on high setting. nothing on the other fan settings.

Replace the blower motor resistor located in the blower housing under the dash on the passenger side and you will be good to go.

Mu 2002 Yukon XL 1500 SLT defrost fan runs all of the time, including when the car is turned off and the key is removed.

You have a faulty blower motor resistor and wiring harness. If you pull the fuse for the HVAC blower thats in the fuse panel under the hood, that will stop the blower and keep it from killing the battery.
The blower motor resistor is under the dash on the passenger side. Remove the plastic hush cover under the dash and you'll see the resistor and the wiring harness assembly attatched to the duct just next to the blower motor. It sits right above where the passengers feet would be.
The dealer has upgraded the wiring and they will sell you a harness kit along with a new resistor. this is a very common problem and is relatively easy to fix. Use a bit of dielectric grease on the plug connections and when you splice the new harness in to avoid any future corosion of the connections.

The heater fan in my 2003 GMC Yukon XL will not turn off, even after the key is turn off, and the door is opened.

I don't know if you already fixed it, but I had the same problem on my 03 yukon, TysonRicky is right. In my case it was the blower control module. You can find it right under the glovebox. It cost me close to $100 for a new one, but very easy to replace. Can't even imagine how much it would've cost me if I had a mechanic do it.
