It sounds like a possible head gasket problem,you can get the fluctuation from combustion gases getting pumped into your cooling system and creating gas pockets,i would suggest taking it to a shop and have them do a block test to look for combustion in the cooling system to confirm the problem,that way you will know for sure,if it comes up negative they can also perform a flow test to make sure there is no restriction in the cooling system such as a plugged radiator or a bad thermostat,hope this sheds a little light on it

yes the thermostat is a pain to get to,its under the throttle body,car should cool down for a while before you attempt to change it because the exhaust pipe is in front of it,the two bolts holding it on are 13mm heads,the top one isnt too bad with a socket wrench and a 6" exstension, the bottom bolt you will have to loosen up with a box end wrench almost until its all the way out(bottom hole is slotted),just be careful when reinstalling the housing,make sure the thermostat stays in place,if it moves when u tighten the bolts down you can crack the housing,hope this helps

Yes, going much below normal temperature going down hill does sound as though the thermostat is stuck open. Although overheating would mean it's stuck closed. Some water boiling into the reservoir is normal. Just so that bottle doesn't overflow. And approaching the "red zone" going up hill is to be expected. Anyway, putting in a new thermostat is cheap and easy and ought to be done every few years on general principle.
