So why is my ,miles left light blinking and changing from 0-999 Crosstrek 2014

The amount of miles changes from car to car. In most cars the fuel light comes when there is somewhere between 1 and 2 gallons of fuel left. The miles you will get will depend on how you drive. The harder you drive the less you will get.
When the light first comes on, and stays on, assume you have 1 gallon worth of miles, (Your MPG number).
Has it just started flashing? The light tells you how much fuel is left and not how far you can drive. If the light is flashing the answer will be not many miles.
You have two choices. Risk it and drive there or ask a friend if they will take you. For both you will need to take a fuel can.

Reset the engine light or the change oil light. HUGE difference

it depends on the last time they were changed and how you drive, just check the thickness of them to determine how much is left.

Look in the owner's manual and find out what that light is telling you. I know whatever it is it is not good.

The car has a brake light circuit powered transmission Park shifter lockout solenoid, so if the brake lights are not working when the pedal is pressed the car will not come out of park. Check the brake lights first. Also the owners manual should have a set of instructions to bypass the part lock, it varies with each car but some you turn the key to just short of the on position and wiggle the shifter while doing that, others there is a button hidden on the shift console

Yes that is normal, Subaru failed to tell customers of the oil consumption, if you go to your Subaru dealer they will fill oil to level & tell you to come back in 1200 miles time, they use 1quart every 1200 miles

if the fan spins on only one setting then it is working and the problem is in the resistors( burnt out) or the control module (replace)

The light comes on when its time to change your oil. I do believe yours is factory set for 7,000 miles. Thus just at or prior to driving 7000 miles it will come on telling you its time for another oil change
