Could be several issues that are common with GM cars :

  1. Bad MAP sensor
  2. Bad TPS (Throttle Position Sensor)
These are the most common areas that would cause the problem you have.

1988 Oldsmobile Delta 88' car stalls out. Coil pack might need to be replaced

Check the spark on each plug wire with a calibrated spark tester. One can be bought at most parts stores. If two plug wires that are next to each other are bad then replace coil pack. There may also be a bad ignition module. Also check the crankshaft position sensor.

Stalls when ideling

Coolant temperature sensor can be checked with an ohmeter.
You should be able to get the cold and hot values from your local auto parts store or a GM manual at your library.
Good place to start with the described condition .
Have you replaced the coolant lately or therm ostat?
If so it may have an air pocket.
To check this feel if you get hot air from the heater constantly or it fluctuates.
