Car runs 100% but as soon as it reaches around

Car runs 100% but as soon as it reaches around 175 degree the car stalls. on restart, runs very rough and am unable to increase rpm at that stage. changed spark plugs and air filter still same problem. tks JL

    175 degrees is the coolant temperature given in degrees on the gauge,

Sounds like the ignition module on the fender.
You would need to know if you are missing spark to the plugs when it quits running. The carb would not run out of fuel then suddenly have fuel again.

Many things could be your problem
1- coolant temperature or wiring defect
2- Cooling fan not working
3- Need to retrieve any engine faulty code with a scanner.
4- With a scanner look for any data that is not normal.
See a good auto technician

2002 grand prix runs rough,dies service engine

sounds like you have a vacuum leak, check all the vacuum hoses and replace any broken or kinked ones, also check around the intake manifold gasket for leaks. any air leaks after the air flow meter creates 'un-metered' air which inturn will make the car run rough and stall, hope this helps
