If the thermostat is properly enstalled and it is good. Start by filling the cooling system when the engine is running. When the coolant is circulating and the radiator is full put the radiator cap on tight. Make certain there is coolant in the overflow bottle. You should be good to go.The belt is on and the radiator are in good shape?
Check the rest of your cooling system but It sounds like you need at least one electric fan since one is defective. It may just be a wiring issue, check this before you buy or replace Andy fans. Next, I'd look closely at the water pump, radiator, all hoses, heater core, etc. Also, check the engine oil and make sure it looks normal, again black or the "prettier" golden/brown color. If the oil is "Milky" looking or much too full, or if your radiator has an ugly substance itvit that'll also look "milky" then you're likely to have a blown head gasket. If you're suspicious of this, get a free Copression Tester from Auto Zone or a local parts store and Test each cylinder while recording the compression evens of each cylinder on a piece of paper.
Hopefully it's nothing major, and you can wire the fans to work all the time, whenever the key is on and if so don't worry as Mandy of us have done this before. Do some more troubleshooting to find the root cause of the overheating. You'll get it, just let us know if we can help further. The video below will show you how to get a god start on this problem!

SOURCE: cooling
there is a temp. sending unit the switch you replaced is for the gauge there is another one which controls the fans
SOURCE: 1996 Grand Prix SE, cooling fans inop
try the fuse,if not that the wiring is bad from the fan to the switch.
SOURCE: SATURN SW1 1993. THE COOLING FAN DOES NOT WORKING
If you've owned this car for a while ,you probably know the fan turn on point is very high on the gauge...about 3/4 the way up which is actually quite close to the red zone. The beauty of the gauge is when the fan does come on,it will drop to below half in a couple minutes which tells alot about the cooling system in general. If it has the ability to drop fast ,under half you have a well running cooling system for the most part. Your fan turns on via a coolant sensor signal to the control unit which then signals a relay to energize the fan. In short, you probably need this coolant sensor which is a $21 dollar part...ask for pn#21025106 at any Saturn dealer..the thermostat is connected to the block from the lower hose connector on front of engine which is held with 2 bolts...ask for pn# 21006335...install these two parts and you should be good to go......good luck
SOURCE: 3.1 L Grand Prix-cooling fan won't kick on, new
probably not a relay, check the coolant temp sensor to make sue its reading ok,if its misreading it will not tell the computer to turn the fan on

What was it doing before thermostat replacement? If it's over heating now and not before, it may be just an air pocket causing the increase in temperature. Was there a small bleeder screw on the thermostat housing?
