There could be several issues:
1 - Faulty water pump - bearing starting to go?...inadequate pulley belt tension? Probably not this since you had a week of good operation.
2 - Faulty radiator fan(s) - make sure at normal engine operation that fans come on. There may be a bad fuse or faulty sensor. Might be this ... electrical things at times can be finicky ... but odds are low
3 - Obstruction in coolant pathway - there have been references with debris accumulating in thermostat housing. When you replaced your thermostat was the pathway clear? Did the internal system where coolant flows look nice and clean or dirty? Even with new thermostat more debris may have dislodged causing a blockage. May need total coolant clean/flush. If your system was not totally clean ... my odds are on this one
4 - Worse scenario - head gasket leak - you would probably notice bad engine performance if the leak is bad. Does the coolant still look good when you take the cap off? Were you loosing coolant or just overheating?

It could be a faulty thermostat. Did it do the same thing before u replaced the t-stat? It sounds like it's sticking closed, then all of a sudden it opens, coolant flows correctly. I'd consider changing it again. Check to make sure parts store is giving u the correct temperature thermostat also. Maybe it's too high for your Ford, delaying the opening.

you could have a bad hose, check the upper and lower hoses and hake sure they are not caving in on themselves. sounds like it could either be that or you might have something cloging the hoses. run the engine with the hood open so you have the pressure build up, and look at both raditior hoses. see if they are bulging out as pressuer gets built, or if they cave in .
