GM vehicles from 2003 to 2006 had instrument cluster problems were gauges showed wrong data , indicating overheating , wrong speed or no speed , low or no oil pressure etc.... Taking to a qualified repair shop that has a professional scanner that can view coolant temp. data to the PCM an from the PCM to the instrument cluster , rather buying parts the vehicle doesn't need . An trying to guess the problem instead of diagnose the problem . Your vehicle may not even be overheating ,if your just going by the temp gauge.

what about the water pump? is the water circulating
is the electric fan working? check all these things outlook in the radiator see if the water is circulating feel the top hose is it cold or hot when the engine is runing

Did you change the right O2 sensor, there are three O2 sensor on the impala, also re check the wire harness to the sensor. It may have a break on it when the wires were manipulated to remove the old sensor. Good luck and keep me posted. You can try this, put the ignition key to the run position and pull the fuse to the ECM (batt) for 30 seconds then place it back in. Start the engine and it may stall but let it, Don't touch anything just start it again. The ECM is re learning the Engine and there should not have any check engine light on. Let it idle for 1 min then go for a test drive, if there is no light then the ECM is cleared all the dtc codes. If the check engine light is on again then the code is new and needs to be addressed. water pump is the problem,you will find the the water pump impellor has broken or come loose from the shaft,you going to have to replace the water pump

Are you sure the Fan is turning to cool the Engine? If it is not coming on to cool Engine Check the Rad. cooling fan relay.

Make sure the small hose going from the reservoir to the radiator and the orifice at the reservoir are not clogged. If OK, check electric cooling fan system, specifically the Coolant Temp. sensor, Fan Relays and Constant Control Relay Module (CCRM).
Electric cooling fan system consists of a fan and electric motor attached to the fan shroud.
The electric cooling fan is wired to operate only when ignition switch is in ON position and engine temperature exceeds specified temperature, or when A/C is on and vehicle speed is less than 45 MPH.
During hard acceleration, the Wide Open Throttle A/C Cut-Off (WAC) relay controls the A/C clutch and cooling fan. A signal is sent to PCM and then to the CCRM, where the module de-energizes the A/C clutch and cooling fan, decreasing engine load during acceleration.
