Most blend door are electrical. You can remove the motor and turn the door with needle nose pliers. If the motor is on the back side of the plenum. You might as well fix it. You have to remove the dash to access it.

a common problem on this model is the servo motors/potentiometers that drive the flaps go faulty there was a jaguar mod/recall which involved changing all of them sounds like 1 off the servos as give up remove the lower dash liners and check connectors etcthe blend flap is high up on the lh side

I have a 2000 jaguar s type and my car runs good but every once in a while at a stop light it just shuts off. The check engine light comes on sometimes? Any idea as to why the car just dies.

Likely, it is fuel contamination caused by use of ethanol blend fuels over time. I'd recommend replacing all fuel in the system with new (preferably non-ethanol fuel if available). If you must use ethanol blend fuel, add WATER REMOVER additive monthly.
Also, replace the fuel filter and check the operation of the fuel pressure regulator.

2000 Jaguar S type 3.0 Blows only cold air on full heat. Just replaced heater control valve with no change. Also flushed and replaced thermostat. Car operating temperaure is fine. Both heater hoses are...

Check the little pump below the brake booster for running and the coolant valve for movement.

Both hoses to fire wall should be hot.

Check for air lock in system.

Blend doors on this vehicle stop working....common complaint.

To verify Blend door movement, turn on ignition with engine off.

Run temp to max and the min..... listen under glove box for ( sliding ) motor noise as door swings from hot to cold.

This is a digital system needing a Jaguar scanner for diagnosis.

sounds like you have a malfunctioning blend door the blend door is what allows you to get cold or hot air out of the HVAC system you might have a blockage or a malfunctioning servo motor. hope this helps you

Cold air

Sounds like its the blend door actuator has failed or loose or cracked vacuum line going to it. These are usually not fun to replace although I dont know about your specific model, but most that I have seen you have to remove the dash.

AC problem

is the compressor turning on? when you turn thwe a/c? on,
and also locate the low side line on engine compartment and feel if is cold, if it is, then your blend door system is not working,
the blend door does control the cold and hot air coming to engine.
