Instrument panel not working. Also, auto door lock and warning tones key in, seat belt, door ajar etc, exterior lights and turn signals do work.

check the igntion off draw fuse if it is blown or not fully seated in the fuse block it can cause this

it may be one of several things ...but sounds like the door switch is not completely engaging or it does and after either hitting a bump or just turning the corner it will break contact just enough to let the vehicle think its either open and then shut ...
in other words if you open the door and try using maby a piece of rubber hose and add it to the switch just a tiny piece or if there is an adjustment present to allow the switch to fully complete the circuit it should stop
as soon as you said the interior lights come on should have been a clue to the issue and being made of plastic they tend to wear bend and cause an issue as such .. on some vehicles there is a door panel that has a plastic stopper that meets the switch if yours is like that consider removing the retaining {plastic} insert screw and put a washer behind it to allow the 2 to meet at a shorter throw ..i hope you understand that .otherwise adjust the door switch if possible if that is not possible try a piece of cardboard temporiarily on all doors until you can decide if this remedies the issue and it should if so then consider replacing the switch or switches upon ensuring this is your issue

As stated above, it is most likely your RKE (remote keyless entry module). It is easy to find and relatively easy to replace yourself. I just recently did so on my 2002 PT Cruiser. Got a used module from a 2005 at a salvage yard. Put in the module myself. However, you do have to take it to the dealer to reprogram so your remotes work with the module replacement.
