According to my lists, 2000 Yukon has a Passlock 2 anti theft security system. This means that the key literally has a transponder in it that sends a radio signal to the ignition. The ignition/lock cylinder then sends a signal to the TDM (theft deterrent module) which then reads the signal and allows your truck to start. If there are any communication breaks, the truck thinks its being stolen and goes into anti theft.... Read up on this link. If what you mean is that the alarm was removed now you have an extra wire, then you have nothing to fear. The cable goes to the alarm, if the alarm had remote start. Is to let know the alarm that the car is on, so it won't continue to crank the starter. If you have no problems with the Yukon you can eliminate the wire.
See GM TSB 05-08-143-001, If you have Adjustable pedals, especially if they don't work with the memeory buttons, but function with thier own buttons. Its the Brake Pedal Position Sensor is shorted and mesing up the seat module which controls the heaters too. My 05 Suburban had the same issue
