The security, antitheft or lock picture/icon is a visual indication that something in the car's antitheft system is failing. In most GM cars and trucks there is a hidden system that most people are unaware even exists. From the moment you put your key in the ignition, there begins a constant line of communication between your key's security chip or transponder, to the ignition's lock cylinder, and then to the car's TDM (Theft Deterrent Module). These 3 parts are in CONSTANT communication. If the key is in the ignition, then these parts are sending signals to each other. The security light illuminates when that signal gets broken, even just for a second. When the signal breaks, the car misinterprets this as an attempt at theft and goes into antitheft mode. The car thinks its being stolen or hotwired because it is not getting that signal from YOUR specific key. This is why the security light turns on and shuts down your vehicle. This link explains it pretty well.

Car ran like a dream.parked, went to restart turned over but no fuel

The security system is supposed to disable the starter and fuel system. So if the engine cranks, and the security light goes off, its probably not a security problem.
You would need to check the pump relay to see if it has power and a ground signal from the computer. You may need a wiring diagram to be able to check the circuits.

The Security system code keeps coming on says car may not restart. Is there a way to disarm this or reset it ?

you will have to go to a shop that has the tool to reprogram the security system with all the keys that are being used so they can be reprogramed to the security system.

2001 tahoe truck stalls and restarts after 20 min, could this be a security system problem?

Normally if its a security issue, it would start back up right away. If the security light appears when this happens, then I'd say it IS most likely a security problem. http://vatspasslockpasskeysecurityhelp.yolasite.com/
