If you tried to run the engine with too much oil in it, the oil could have filled the cylinders. Pull the sparkplugs out and crank it over to check. Oil could also have filled the air cleaner and intake manifold. Open up to check there, too.
There are several approved, but one of the most common is the Mobil1 European 0W40 Synthetic motor oil. If it meets the MB 229.5 spec, you are more than covered.
Those don't have dipsticks if I remember correctly so put in about 7.5 quarts or about 7 liters. You can add a little more, but don't go over 8 quarts or 7.5 liters.
They may have added too much oil -- a 2004 MB ml350 with a 3.7L engine should take only 8.5 Quarts (including what goes in the oil filter) -- Exactly 8.5 Quarts, no more, no less. You may be able do check the oil level by using the onboard computer - pushing the buttons on the steering wheel - follow the directions in the owners manual on how to check the oil level.

It is located on the left side of the engine, rear, and an element type filter. The cap for the housing will be black and simply unscrews and once removed cap has been removed, be sure to replace the o ring also. System should hold about 7-8 quarts.
Oil pressure sensor blocked or faulty. both oil level sensor and oil pressure sensor activate the oil light. engine goes into safe mode and shuts off ignition.
Warm the engine up, Remove the Drain plug and drain oil out (Drain plug is on the drivers side of the pan).
When oil is done draining replace the drain plug and install a new crush seal (silvery washer on drain plug)
Next you will need a Oil filter socket. Use the oil filter socket with a 3/8 drive ratchet with a 6 inch extension, remove the filter, it will be full of oil.
Use fresh motor oil and coat the gasket on the new filter and install. tighten filter 1.5 turns past hand tight.
Refill the engine with 5w-30 Conventional oil. (start with 4 quarts than check the dipstick) Subaru recomends havoline as this is what they come with from the factory.
Wipe up any oil that may have spilled on the exhaust cross over pipe.
